Rain, rain...

...so no yardwork today (though Jason did pick the mower up from the repair shop; that counts for something, I think). Can't do any planting, but I've done more digging around in the freezer to see what's left from last season. A few good finds:

1. Eight individual-size shortcakes. I'd pureed the last of the 2008 CSA strawberries into a smoothie just a few days before, but there were strawberries at the supermarket this week- not local yet, of course, but they were ripe, fragrant, organic CA berries and I figured "Why not?" And so we had strawberry shortcake for dessert on Thursday night. I saw a recipe for a mixed berry cobbler in Everyday Food recently- might use the remaining shortcakes in a version of that next week.

2. A large bag of blanched chopped kale. I had a couple of potatoes on hand and decided to make an improv version of Greens with Potatoes. I cubed the potatoes and put them on the stove, intending to parboil them, but that didn't happen. I was distracted by a Diaper Emergency and the potatoes got overcooked. No problem, though- I mashed them instead with a little butter, milk and sour cream. Then I sauteed chopped garlic in a bit of olive oil, added the kale, a can of drained diced tomatoes, a few splashes of white wine, and salt. Simmered til most of the liquid evaporated, and finished with a squeeze of lemon and a few grinds of pepper. We spooned the kale and tomato mixture over the potatoes and topped it with some grated sharp provolone cheese. The potatoes, sour cream, wine, and cheese were all pantry/fridge finds, so the meal really did its part to use up odds and ends!

You're back! After a long winter's nap :)

I need to get in freezer cleaning mode myself. We have lots of bounty in there just waiting to be used up... if only I weren't so tempted by some of the spring delights at the market!
