Here's another summertime regular at our house: grilled vegetable panini. Until this year, they were only "sandwiches" but when I received a panini press for Christmas, they became "panini."
My favorite combination is grilled eggplant, summer squash, bell peppers and onions with a bit of fresh basil and some nice melty cheese. These are especially nice if you've already got grilled veggies on hand. Grilling some burgers tonight? Throw a few sliced vegetables on the grill too, and tomorrow night's meal will come together in a flash.
I used ciabatta rolls for last night's panini, but baguettes or thick slices of sourdough are also good. Simply slice open the bread, layer on the ingredients, put the top slice of bread on and give the sandwich a good smush with the palm of your hand. Then put it in your grill pan or panini press until crusty and melty. Or, skip the panini step and just enjoy some darned good summery sandwiches.
One more zucchini bites the dust in a most delicious way!
