CSA Week 9- Recap

Here's how we used (or didn't use) last week's share:

  • 1 1/2 lbs. potatoes- these went in to a Layered Vegetable Casserole. Sliced parboiled potatoes are topped with sliced zucchini, onions, green bell peppers, tomatoes, and a cheesy breadcrumb topping.
  • 1 head garlic- some into the pesto, some still in the fridge
  • 1 bunch basil- pesto pesto pesto
  • 1 bunch onions- Layered Vegetable Casserole, and Veggie Fajitas
  • 1.5 lbs. tomatoes- One of the 2 large tomatoes became salsa for our Veggie Fajitas; the other went into Friday night's Panzanella.
  • 1 Anaheim(?) pepper- Added some heat to our salsa
  • 1 head lettuce - Became two dinner salads
  • 5 summer squash- Veggie Fajitas and Layered Vegetable Casserole, but I haven't used the pattypans yet.
The grilled vegetable panini from earlier this week were made with produce from the supermarket- though it was all Jersey-fresh local stuff!
