More fun with strawberries

I may seem to be obsessed with strawberry pie, but I promise you I'm enjoying them in many other ways. These muffins are a long-time favorite of mine- they taste a lot like my standard strawberry breakfast smoothie. Maybe that's because the strawberries are pureed with orange zest and egg before being mixed with the dry ingredients. The baked muffins are quite pink, tender, and made even prettier with a little bit of sparkling sugar on top.


My son loves these muffins too. Well, he loves all muffins, but he particularly likes these. This led to a huge Muffin Tantrum the other night when, long story short, he misbehaved at the table and did not get to have a muffin after dinner. Oh, the tears and recriminations! The last thing he said when I put him to bed that night was "After I sleep, I will have a stwahbewwy muffin, right Mommy?" And of course, he did.
