I've made tacos with greens before- there are good recipes in both Jack Bishop's A Year in a Vegetarian Kitchen, and Rick Bayless's Mexican Kitchen. But the other night I improvised (read: I was too L-A-Z-Y to go downstairs and get out a cookbook) and came up with my own combination that I really liked.
My version involved warm corn tortillas wrapped around a filling of seasoned pinto beans, garlicky wilted spinach, seared red onions, and a sprinkling of Monterey jack cheese. They were rustic, satisfying, and very tasty. I'm writing down the recipe as much for myself as for you, as I plan to repeat this combination in the future (of course, that will entail getting off my duff and coming downstairs to the computer to retrieve said recipe... but these were so good, they're worth the trip!).
